This was my Easter Sunday beauty. Good luck with yours!
The irony is perplexing. My last post was about 3 healthy snacks and now I'm giving you
a recipe sure to put you in a sugary stupor. 
 
Do I feel guilty? No way! All things in moderation, right?

The Busy Chick's Quick 
Pineapple Upside Down Cake 

Topping

1 stick of melted butter (or margarine)
1 1/2 cups firmly packed brown sugar
1 can (20 ounces) pineapple slices, in natural juice
10 Maraschino cherries, halved and drained

The cake is oh so easy!
1 package Yellow Cake Mix (don't ya love me?)
1 cup water or drained pineapple juice
*Replace oil on box with melted butter

1. Preheat oven to 350 degrees

2. Melt the butter and pour in a bundt pain. 
 
3. Pour brown sugar around the perimeter of the pan. Press down a bit into the butter.

4. Arrange pineapple slices in circular motion around the pain. 
 
5. Place maraschino cherries in the center of the pineapple rings and in any free space to create the design of your choice. 
 
6. Mix the cake as directed. Remember to substitute the liquid for pineapple juice and the vegetable oil with butter. 
 
7. Pour batter evenly over fruit in pan. Bake according to directions. 
 
Allow cake to cool SLIGHTLY before inverting (turning upside down) onto a pretty plate.
